YOU DON'T HAVE TO TRAVEL
ALL THE WAY TO FRANCE
To taste a fresh,
Buttery croissant - not when La Quiche Parisienne Bistro is just
downtown, Bruno Barachin and Sabine Pasco, the husband and wife owners
running the tiny cafe, moved here from France, and they have a secret
when it comes to creating delicious fare.
To ensure that
everything at La Quiche is made from scratch, Barachin arrives to start
cooking at 2am every morning. "You can't com in at 6am when you make
everything from scratch," Pasco says. Put your diets on hold when you
visit La Quiche; everything is made with butter and whole cream, there'
is no margarine or "skim" here. "We have pure butter croissants and
they're even better than in France - they' are bad!" Pasco says with a
laugh. She recommends the Almond Croissant or Almond Chocolate Croissant
(around $3) made with almond cream and imported chocolate.
Those in need of a
more savory meal can choose between to quiches filled with everything
from salmon and and asparagus; ham, bacon, and cheese; zucchini, pesto,
and tomato; and more (around $9). Or choose from eleven different
sandwiches all made on fresh, homemade bread (around $9). Stop inside
this quaint French Bistro in downtown Albuquerque and said hello to
Barachin and Pasco as they whip up something magnifique.
